We’ve been hearing A LOT about White Claw Hard Seltzers lately, but when our beer distributor told us that White Claw Seltzers are as popular in Wisconsin right now as Spotted Cow; well, that was mind-blowing! So, new to The Lab: White Claw Black Cherry! It’s only 100 calories, gluten-free, and pairs amazingly with pizza and salads! (Oh, and we have Spotted Cow, too. this is Wisconsin afterall.)

Fresh Dough is Better!

Did you know we make our dough in-house, every day using locally-sourced Neapolitan flour? Or, that we allow it, at least, 24-hours to rise? Or, that it’s 100% vegan and we use no preservatives? Pretty awesome, right?

Did you also know that you can purchase our dough balls, so you can bake your own pizzas at home?! Why buy frozen dough or dry, pre-made pizza crusts full of chemicals at the grocery, when you can buy fresh dough from The Lab?

National Cheese Day!

If you don’t already know, we LOVE cheese. We take it seriously. That’s why we only use Wisconsin’s best mozzarella, Grande Cheese – made locally by wonderful men and women in our own community. Great cheese makes better pizza. Happy National Cheese Day, everyone!

Green Onion is back!

Fresh-chopped green onions are back in The Lab. Get in here fast before they are replaced with our next Topping of the Month. You can add them to your Create-Your-Own pizza or even amp up a salad. Don’t be afraid to experiment! 

Pizza of the Month!

Our new Pizza of the Month is the Buffalo Chicken Ranch. A few of our favorite regular guests came up with this bad boy! It starts with a blend of creamy ranch dressing and spicy buffalo sauce as the base, then we add Grande mozzarella, chicken, bacon, tomatoes and fresh cilantro.

Gluten Free Heaven!

Everybody deserves CAKE! We do our best to have something for everyone and that includes pizza lovers with gluten sensitivities. That’s why we have two different types of gluten free crusts: Our vegan, herbed gluten free crust and our new cauliflower crust. And, for dessert, two different options: Decadent “Death By Chocolate” triple-chocolate mousse, flourless cake or Sweet Street’s Brown Butter and Sea Salt Marshmallow Treats.
